“I will bring to Dubai a bite of Italian taste, from breakfast to dinner, with two proposals: the informal ‘Spazio Bar e Cucina’ (‘Spazio Bar and Cuisine’), a fusion of bar and osteria, and ‘Ristorante Niko Romito’, a more gourmet option open at the Bulgari hotels in Milan, Beijing, Dubai and Shanghai”. These are the words used by Niko Romito, an Abruzzo-born chef, the winner of three Michelin stars and the face of the Bvlgari restaurants in telling the newspaper Corriere.it about the Italy Pavilion’s extraordinary food offer at Expo 2020 Dubai.
“I am satisfied and proud – Chef Romito explained – because, over the six months, a large number of people will be able to try the many facets of our cuisine. There will indeed be many food styles at the Pavilion: from street food like the “bomba” (sweet and savoury), bread appetizers and “focaccia” that will be found at ‘Spazio’, to the traditional and at the same time modern regional recipes served at the ‘Ristorante’”.
The chef concluded: “My entire gastronomic research over the past few years has combined great classic recipes with technology to lighten and concentrate tastes. The evolving contemporary Italian cuisine is simple, elegant and joyful, and focused on the value of sharing”.
